Here at the Education Centre we make sure that ours students get a good meal to prepare them to learn. Our students come from impoverished families, which means it can be difficult for them to eat well at home, so because of our meals we know they are being nourished.
But what is food like in Northern India?
Firstly there is frequent use of spices such as pepper, cardamon, cloves, cinnamon, coriander, nutmeg and cumin. Dairy products are frequently used, such as milk, cream, cottage cheese, yoghurt and ghee.
Northern Indian cuisine also favours breads such as naan and roti (bread made in a tandoor oven) over rice. Popular foods also include stuffed parathas, flaky bread filled with different fillings, and kulchas, bread made from fermented dough.
